Penicillin : 60ml Scotch, 22ml Lemon juice, 12ml Ginger Syrup, 12ml Honey Syrup[1], rocks, Optional Islay single malt float

Shaky Pete's Ginger Brew : 35ml Gin, 50ml Lemon juice, 50ml Ginger Syrup, 100ml Ale/IPA. Blitz with 3 ice cubes or shake really hard. Pour into a frozen collins glass or small beer glass, top with the very cold beer.

Both go really well with Haggis!

- Ginger Syrup

With Burns night coming up on Sat, 25 Jan 2025, now is the perfect time to make up a batch of Ginger Syrup.

100g of peeled and finely chopped fresh Ginger,
100g sugar,
50g water,

Thoroughly blitz the mixture in a blender, strain through muslin. Save it in a jam jar sterilised with boiling water. It'll keep in the fridge for a month or so.

"The collective recital of an important dream, lest its details slip away" This. I've recently been listening to FourTet/Floating points 6hr set and then dipping into Caribou's 1000 track playlist. And in both I was struck by their reverence for the late 60s and early 70s mainly in the form of barely remembered soul and funk.
