This week's cocktail is the Aviation. 30ml good Gin, 20ml Maraschino, 15ml fresh lemon juice shaken and strained into a Martini glass, garnished with a flamed lemon peel.

Clean, fresh and with a hint of metallic after taste from the maraschino. I have to confess I really haven't mastered flaming the peel!

A bottle of Maraschino goes quite a long way. But it's not expensive and it's nice to have in the cupboard next to the bottles of Grenadine and Pastis.25 Musley Ln, Ware, Hertfordshire SG12 7
